Potato sausages

Grate potatoes on a fine grater, add finely chopped garlic, cumin. Divide the potato mass into two parts: add pearl barley (previously soaked in water), eggs, salt and ground sweet pepper to one part. Add diced meat fried with onions to the other part. Fill pig intestines with both masses, tie the ends of intestines with a thread. Oil frying form with fat and bake in the oven for 2,5 hours.

Potato puree casserole

Peel potatoes and put them into the pot to boil. Cut bacon into small pieces and fry. When the bacon is golden brown, add cut onions and salt according to your taste. Mash boiled potatoes. Add fried bacon with onions, mix all ingredients. Put the potato mass into the frying pan and bake in the oven. Serve hot.

Bread kvass

Put brown bread crumbs or roasted rye bread slices in a bowl with boiling water. Keep in a warm place. When the liquid becomes brown, filter it through a fine sieve or gauze. After 1-2 days the kvass is ready.

Herbal tea

Fresh black currant, peppermint leaves with boiling water. Leave for a few minutes. You can add sugar.

Botvinya (Soup from young beet leaves and stems)

Cook broth from the bones, for 1 litre water use 2 carrots (chopped), parsley root, 1 onion, 3 medium-sized potatoes, salt according to your taste, 2 or 3 bay leaves, 3 or 5 peppercorns and various greens - onions, parsley, dill. Boil the broth with all the additives until the potatoes are soft. Wash young beet leaves, stems and roots properly, cut finely, pour boiling water over them or cook a little, then add to broth and boil 2 - 3 min. Add ½ cup of sour cream before serving. You can also add 1 to 2 cut boiled eggs. Add a little sugar according to your taste. Serve hot.

Haladnik (Summer cold soup)

Chop and boil about 1 kg of sorrels, then let it cool (the soup will be thicker, if you boil a little bit of pearl barley first). Cut 2 cucumbers, young green onions, chop 2 eggs, add dill, a glass of cream, salt. Sugar should not be added.

Potrauka

Cook broth. After that cook liver, grate it on a grater and cover with potato starch – put liver into the boiling broth – it will make the soup.

Babka from pumpkin

1,5 -2 kg pumpkin, 2 onions, 0,5 glasses of flour, 2-3 eggs, 100 gr butter, 1 glass sour cream, salt, bay leaves, cumin, greens
Grate pumpkin and onions, add 0,5 glasses of flour, 2-3 eggs, 1 glass sour cream. Whip egg whites, mix everything, put into the form, strew with greens and bake in the oven. Serve with sour cream.
